Everything in the displays, the wild pink Key West shrimp, the stone crab claws, yellow tail snappers and black groupers are caught along the Florida coasts. Billy's buys directly from the fishermen. You can taste the difference between a wild pink Florida shrimp and one that's farmed, which is what most restaurants serve, he says. Behind the market is Billy's newly remodeled wine room. It has mahogany-refrigerated units that hold 600 bottles of wine. Although it is used for lunch and dinner, it can be used for parties, special occasions and business presentations.

Billy Hershey, a U.S. Coast Guard certified captain, owns a white 40-foot Sports Fisherman fishing boat, The Crack'n Crab. He says, "I take people out for half-day (six hours, instead of four) and full day charters for sailfish, sharks, dolphins, tuna, and cobia, whatever is biting. We had a charter on which we caught eight dolphins and a pair of black fin tuna. Whatever fish they catch, we cook it for them. We'll broil, grill or fry it compliments of Billy, and throw in some hash browns or French fries." He's able to take six people out at a time. They're treated as if they were seated at a table in the restaurant. He adds, "Great service is our top priority after all. We make sure they are pampered and left with great memories."
